Mix all the ingredients of the hummus and grind until it has a fine texture without lumps. Peel the mango and cut into quarters, mix with the chickpeas, the clove of garlic, cumin, pepper, salt, a drizzle of oil and a splash of lemon juice.

Lightly grill to cook the outside, not the inside. Cut into thin slices.
Cut the loaf into slices and toast.
Place the hummus on the toast. Cover with the sliced tuna, finish with sesame seeds and a splash of soy. It may be decorated with a few onion shoots.
